I drove an 05 Subaru Outback XT in New England for 2 years with "performance" snow tires, Dunlop Wintersport M3 and went to most of the ski resorts there on snowy days. I wouldn't get the XT version again due to bad gas mileage, but it is very fast, I would probably get the base engine now. With this, you would have plenty of room in the back, decent mileage, I think about 8" of clearance, and if you put on some "real" snow tires, like Hakkapellitas or Blizzaks, something like that, I bet that would work well for you.
I never had any traction, slipping issues with this car unless I tried to make the rear come out intentionally or something. The other thing, I think you can get 05 or 06 Outbacks for a pretty good deal now.
