I own a 9000 and a 9-5.
I think that the 9000 will give you a reasonable "old-Saab" feel, but will keep you a fewer years more current for parts support and indy mechanic knowledge. The seats are quite similar, as is the look and feel of the interior--even the smell is similar. If you get into an even older car, I think that you are getting into DIY realm, and even there you need to be a clever DIY person with the knowledge to improvise. I even find myself doing that on the 9000, but mostly due to cost considerations.
You might want to drive a 9-5 to see if you like it. It is still a Saab, but wow, a lot of it is gone. It is a more refined car, I cannot dispute that. 100 mph with hardly a whisper. Not sure that is what you are after though. Seats are not as good.
Good luck with everything. If it were me, I would let the dust settle before looking at cars though.
