I have driven two 9-5s (a 2004 and a 2005) with a stick and really liked the gearbox and gear ratios. Very, very easy cars to drive. The gearchange was smooth as butter. Not quite as good as my old 900 (nothing beats that snick-snick feeling) but way better than any Honda, BMW or Mercedes I have driven.
Clutch pedal was very good, too. Light effort, easy engagement. Not as good as my old Volvo 240, which had absolutely outstanding clutch, but very good. My old 900 (1986) had terrible clutch -- heavy, poor feeling. The master cylinder finally gave out at 320k miles and I was glad it did. The new one I installed (very easy job) was distinctly better.
I do think that clutch feel is individual to each car, so no generalized characteristic can be given to a car model as a whole. I had two identical BMW 325i sedans, both 2003, with similar miles, etc. One had phenomenal clutch (still have that one) and the other had probably the worst clutch feel of any car I have ever tried (sold that one).
