Unless you already have an investment in a particular manufacturer's lens collection, take her to a camera store to "try out" the different cameras.
Just as with cars, cameras have different ergonomics, and she may have a preference for one over the other. I found I preferred the Canon ergonomics to those of the Nikon, but I'm sure that they both take excellent photos, in the right hands.
Canon, Nikon, Olympus and Pentax all make good cameras in a variety of price ranges. Canon & Nikon would be preferred, only if you really think you'll need to use the depth of their "kit bags" (aka accessory range). You can get lots of accessories for Olympus & Pentax, too, but their bags don't go quite as deep.
Oh - and try to find a good, local CAMERA store, not a department store. You'll find people there that know the products, and can help with questions.
