http://www.hobby-boards.com/ is where I've gotten the sensors.
You get a 1-wire serial or USB adaptor. Then the sensors. I got the temp/humidity sensor there as it's basically ready to go, but there is a whole business ecosystem of 1-wire sensors from a variety of companies and designers and it's supposed to be easier than many other sensor systems.
You are able to daisy chain the sensors to save wiring.
If you are trying to measure electrical current you might look for some sort of meter with a serial or other data-out port. Fluke used to make some but I haven't looked in ages. There are cheaper sensors for that now that smart metering is becoming popular. I haven't really investigated.
1-wire filesystem is an open-source driver that allows you to read the sensor data as files. I have a cron script which reads the temp and humidity files and presents them in a way that is happy with Mrtg. Mrtg does the graphing and makes the webpages showing graphs. This webdata is mirrored to my website for public display.
