Eight miles is much too far to go without oil in the engine. It may seem OK at the moment, but this has shortened the life of the motor by stressing many internal components.
Be polite, insistent, and if they balk lawyer up. A letter from a lawyer is probably all you'll need because they know you will win if it goes to court. After all, your daughter was, of course, planning to keep this car a very long time, and now she has to worry about the health and longevity of a relatively young engine.
Insist on a new engine, not a reman, and get a guarantee on the new one. Also, she should be issued a loaner or reimbursed for a rental during the repair period.
And I thought only quick lube places forgot to put the oil in.
