I haven't heard anything about ongoing support for old servers, but IME Apple cares very little for their customers who aren't running the latest and greatest. It was bad pre-OSX when the next OS revision left everyone who had a previous version totally unsupported, but OSX alleviated a lot of that largely due to its BSD origins. iOS seems to be reversing that trend, where devices that have old OS versions are summarily locked out. I am reasonably certain that the poor performance of the Xserve line commercially leaves relatively few people who are actually going to be left out in the cold... they were superb machines, but always positioned as an "if you must..." product line rather than a halo product.
I find it interesting that Microsoft takes so much flak for being a bully but people embrace the even more draconian "our way or no way" approach that Apple has applied for the last ~10ish years. Maybe reality takes a while to set in or something, or perhaps warm comfy sweaters are the kid gloves of the technology world. I'm not excusing Microsoft, but I will proclaim Apple of 2011 is no better and arguably worse in their treatment of consumers. Funny thing is that back when the computer world was "victimized" by Microsoft most of the users were actually pretty happy. It's only when Microsoft's competition cried foul that MS was branded an Evil Empire. Apple has solved that problem by simply not having any competition, and suing anyone who tries out of existence. There is value in that approach, for sure. Me, I change my own head gaskets and eradicate my own viruses. I don't like Saab or Microsoft less for the work I have to put in maintaining a complex product. I'm happy I don't have to take the bus or wait in line for a few minutes on a terminal.
