There are a number of generic plates for the 32/36 available on eBay. Most are for adapting the Weber to Toyotas and Subarus, and I found just a plain 1/2" aluminum spacer: https://www.ebay.com/itm/225799751520 That I'm going to tap and drill for PCV port. My manifold currently has a PCV valve in the #3 runner, but I think that contributes to an idle problems.
There'a also an outfit in the UK: NOSwizard.com that makes a 3/4" plate already drilled and tapped on the two ends for nitrous injectors.
Two notes on the carb question from the OP: we originally ran the Weber 32/36 DFV because it was what we had for free. The DFV reverses everything from the DGV, but it fit better IMHO. It also had the simple manual choke, which saves a lot of space. Modern Webers that you buy now, just change the cap on the choke actuator to go from an electric to a manual choke. That leaves a lot of bulky fittings hanging off one end of the carb and interfering with the breather on the starboard valve cover.
