By that argument, they could have left the entire dash unlit. Eventually we would all just memorize the locations and feel of all the buttons. We could also feel the positions of the gauges with our hands instead of having to look. A great new safety feature would be to use brail instead of text to label all the dash controls. :)
Seriously, I see no reason not to light the steering wheel controls. If you have them memorized, then you don't have to look. If you don't have them memorized, then at night you have to move both your eyes and hands to the dash controls. This is much worse than a quick glance at the steering wheel while keeping your hands in place.
