Interesting question, Tim. I only had one car with a sludged engine, a 1975 Mercedes with a DOHC straight six. I did a valve job and cleaned out the head but left the oil pan alone. It ran a long time and never sludged again. The car had been owned by a doctor who drove about a mile to his office so the car never warmed up. The condensation from cold mornings is likely where the water vapor came from.
Sludge is what you get when oil emulsifies with water, creating a jellyish goop sort of like a creamy salad dressing. In my engine the sludge existing only on top of things, not inside any oil galleries where there was active oil flow of any kind. So the entire top of the head was covered in about 3/16 inch of whitish salad dressing stuff but there was no creamy stuff anywhere else that I could find. The point is that any oil flow greater than the sloshing around of the oil in the sump is likely to dislodge the stuff. The other point is that based on my experience there will only be sludge sitting in the bottom of the sump, on the top of the head, and inside the valve cover. Oil pressure will prevent any accumulation inside any oil galleries.
I'm thinking that the Saab engine takes a pretty long time to sludge up, and is constantly self-cleaning, although obviously not perfectly. Otherwise the sludge would keep piling up indefinitely and there'd be a whole lot of dead Saabs out there.
