You are asking whether someone would pay more for an apple or an orange. If you want an apple, buy an apple. If you want an orange, buy an orange. It's a matter of preference, not intrinsic value.
That said, Saabs have virtually no value as a collector's item. A rare 850MC or 99T or c900SE simply isn't worth that much. The value of these cars is pretty much limited to people who like to drive Saabs... there is no value in keeping them in a climate controlled warehouse next to your prized 250GTO. To that end, I don't think it's at all unreasonable to believe someone would seek out a nicely resto-modded '79 Saab - it's a car they are going to be able to drive and enjoy much more readily than an all-original car.
It is impossible to believe that in 2030 someone will pay big money for a first year car from a defunct brand in a relatively limited body style, but we're not the point that could even be anticipated, and I wouldn't be among the ones planning on it.
