For what it's worth back when I worked on my 1986 900S AC system (about 20 years ago) the aftermarket expansion valve I'd purchased did not work. I wound up putting the original back in and it's been fine ever since. (That car still has its original Sanden compressor which still works fine. Those things can last a long time.)

As far as refrigerant oil is concerned there should be a sticker in the engine compartment saying how much oil is required. (It will also have the refrigerant charge but that would be for R12 of course, and your AC has been converted to R134a. There is a formula for calculating the equivalent amount of R134a.)

Here's a pressure diagnostic chart, it does indicate in "Scenario 1" that an expansion valve stuck open can cause the symptoms you're seeing (low side too high, high side normal).
