I'm in the same 'boat'. Getting ready to do the kitchen. We just did a bath with Absolute Black granite and love it, but feel it's a bit extreme for our kitchen. I saw the new Formica version of solid surfacing (Surell sp?) and it seems like as viable an alternative as Corian, both are sandable in the case of a burn, etc and can be done seamlessly. Natural stone, on the other hand, has a beauty unmatched by man-made material. We have several friends who used granite in some fantastic colors and they are beautiful. The only caveat I've heard about granite in the kitchen is that it needs to be sealed yearly, I cannot comment as to whether that's absolutely necessary or not. One personal item, we are going to do under cabinet lighting and I've seen some installations using polished granite that show horrible reflections of the underside of the cabinet and the lighting source when you are standing at the counter, just a personal aside. Good luck, there are so many choices out there for cabinets, hardware and counter top surfaces it is mind boggling :)
