I wouldn't give up on January in Yellowstone. Check their website, or call them for info on the weather. I'm sure it is colder, but you'll be working too hard to notice.
I had a few really warm days to start out, and looked like a total idiot because I used wax. The sunny areas were slushy, and shadows dry powder. I met a couple of airline pilots on the way in and offered to teach them some basic XC. Of course they got nowax and did fine, and I was either sliding backwards downhill, or trying to carry 50lbs of snow per ski. I was tired after that run up the mountain! Later in the week I would make the run before breakfast.
Clouds and cooler temps, along with constant snow, got me back to picking a wax that would go. Wide and long skis are an advantage here. Can't imagine a lot of skating. Trails are groomed by the guy in front of you.
I stayed at the "Winter Lodge", which is the dorm for summer workers at Old Faithful Inn. They also had a number of cabins which would be great for a family or group of friends. Could probably do some of your own cooking too in case you get tired of the canned spaghetti and frozen lasagna served in the cafeteria. Would have liked to do some winter camping, and did drag along a down bag, but was not able to carry other gear on this multi part trip. The lodge gives you a place to duck into for warmth.
I was most cautious with the bison, though I'm sure moose and elk could give you problems. The bison seemed unpredictable and unfriendly. And BIG!
