With so much to see around Amsterdam you could easily spend lots of time in the city. The art museums, the architecture, and of course the locals are all very interesting. I was 19 when I went the first time..and I was alone.. it was intimidating. I went back a few years later and had a blast. Being American isn't a problem. You will be fine.
One recomendation, there is a small village called Ultrecht about 1/2 hour north....very clean compared to A-dam, and it is world famous for its cheese. They also have historic windmills you can go in. Ultrecht is also about a 20 min bus ride from the ocean... which could be fun and different.
Have a great time... very jealous.
