You won't have any trouble using English. The people in Amsterdam don't resent unilingual Anglos. They're not particularly anti-American (I'm Canadian) so far as I can see. Take more cash or travellers' cheques than you might take somewhere else. Amsterdam still favours cash and some stores and restaurants don't take credit cards. Restaurant service is laughable. The waiter isn't there to serve you; instead you are there to compete for the attention of the waiter.
It's a *wonderful* city. Most of what's interesting is in the old city, inside the canal loop. Hotels there are expensive but it's worth paying to be central (consider Dam Square the geographic centre of the city.) The Museum District has somewhat cheaper hotels but apart from the museums and Vondel Park there's not much interesting there. If you haven't already booked be aware that accommodation is very hard to get on weekends. I've been there when the booking agents at Schiphol were sending people to Germany because there were no rooms between Amsterdam and Rotterdam.
The old city is perfect for walking. The red light district lacks the squalor you find in other cities and it's safe to walk through in daylight. European cities go in for pickpockets rather than muggers so watch out how you carry your belongings. It rains a lot in Amsterdam which can put a damper (literally) on a trip there.
