Hamilton Whatever is a defense contractor, and as such is subject to the changes in the political climate. As a friend who worked on the Space Station said, it ain't fun watching Congress debate your job away.
Exxon, is, well, Exxon. They have us all by the <beep> and that's the end of it. I'd be concerned about outsourcing and such, but it sounds more secure than the first one. I've passed Beaumont, it's an oil town 100%, and while some oil towns are good (Lafayette, LA) in the area some are dumps.
The Goldman, well, the financial sector goes thru cuts faster than an overheating 9-5 goes thru DI's (am I on a roll or what?). Sounds like the most outsourceable of the three.
As a mech engineer you will not have any mech eng work in Goldman, obviously. The first two are more like it. If you like engineering then it's one of the first two; probably the first, because of the 'glory' factor; Being a defense / aerospace place, tho, chances are they have many more warm bodies than they need, so the possibility of faster advancement is lower. I recall most of my classmates in the 80's headed for defense jobs, I was about the only person who got to write code 40 hours a week, in an automotive R&D lab of all places.
