Regardless of your choice, you have great offers and should be thankful that you have them. Your allowed a flip-flop early in your career.
I wouldn't discard Goldman despite the HR functional area. At your level they are hiring raw talent, and once you're in the door and do a good job, there is plenty cross-functional mobility. And, there are many areas at Goldman besides trading that offer outstanding compensation.
Do not worry about forgetting your engineering, I doubt you ever will regardless of career path. Besides it's on-the-job learning that will count from here on. I believe you would have no problem going back to engineering after a couple of years in financial services if you did not like it. 10 years certainly would be an issue, but at the beginning of your career 2-3 years is not a big deal.
All companies are not equal on the resume, but you do have 3 good ones. The thing about Goldman is that it crosses functions and industries and makes you attractive almost anywhere, except maybe a non-profit protest group or academia. While the Goldman credential may not mean alot to some lower management(and apparently a few Saabnet geeks) it will mean something to any executive. With Exxon you will tend to narrow the future choices, maybe less so with UT. Consider that you do not want to close off options at the beginning.
I have not mentioned geography, becasue you should be willing to go anywhere at this point, but Beaumont, Texas is hicksville.
