Also have a Viggen (99) and an 85 900. Just picked up an 08 9-3 aero sportcombi for my wife, and my dad has a sonnett, a 9k aero, and has had 99's in the past, so I've driven pretty much the full spectrum of Saab products.
Ultimately, it comes down to what 'saabiness' means to you. If it's quality, well...I can't say that the materials in the old cars were any better. Look at the dashboards, the headliners...certainly, they were much simpler cars, but I wouldn't say they were of any higher quality than the more modern varients.
In terms of the drive, well, that's up to you. I would LOVE to have my wife's car as a commuter. Is it as engaging to drive as my Viggen? Definitely not. Is my Viggen as engaging to drive as my 900? No way. As cars get more sophisticated, they generally get more numb - at least in my experience. To me, that does not mean a reduction in quality, but rather changing with the times. Try selling a C900 or even an OG9-3 to someone looking at something in the 9-3ss segment. Ha!
