I purchased a 2006 9-5 Aero a couple of months ago, after about 4 years in a 2000 9-5 Aero. GM definitely cheapened the car. The ride on the newer 9-5 seems firmer and quieter (maqybe because it is newer), but other than that there's not much that I can say got better. Here's a partial of what I see:

Nice thick floor mats with logo replaced by thin, cheap mats with no logo. Fastening holes in the mats don't line up well with the floor fasteners.

Leather wrapped steering wheel now wrapped with a plastic wrap made to look like leather. This one especially ticks me off. Aside from your butt in the seat, the steering wheel is where you touch the car the most, and the plastic just screams out cheapo every time I touch it.

Leather replaced by plastic in the shift boot (manual shift), seat back pockets and door panel inserts.

Door handles: the 2000 had firm, solid handles. The 2006 has flimsy, hollow handles that you can flex with not too much effort.

ACC system: You cannot program your ACC startup options like you could on the 2000. The air conditioner is always on and the system defaults to auto mode; you cannot override it to do otherwise. I had an Oldmobile Intrigue and the ACC system had the same idiot logic. Apparently GM engineers think they know what customer wants better than the customers.

I still haven't figured out why the rear inside lights on the right and left side are different. The local inspection station flagged it as a wiring problem, but the dealer said everything was normal.

Seat padding (mentioned earlier).

Inside truck release: They moved it to the middle of the truck, where it just hangs out of the liner and bangs back and forth every time you shut the trunk.

This is what I can see. I have no idea where they cheapened and cut corners in places I can't see.

I love my SAAB, but these details on the 2006 are disappointing considering what the car was.
