Actually, I think you should do what feels right to you. But FWIW, my daily driver is a 1995 E36 and it's been reliable and easy to maintain. The cooling system overhaul can be done for $300 in parts (I just ordered them). The other things that you've replaced sound like wear items (although the a/c system can be an expensive pain on these cars). You've had it for 3 years, you probably have a feel for whether it's a car worth keeping. Do you like it?
I loved my 2003 9-5 Aero but it became too unreliable and expensive to maintain for me. I sold it to a friend who wanted a new project. He put lots of time and few bucks into it, and now he's loving it and using it as his daily driver. But he's younger and doesn't have a wife or kids. I miss it but it was time to sell it.
That being said, I've owned 4 VWs and would never own another. I'd get a Saab over a VW every time. Good luck with your decision.
