I'm a mountain biker, so I'm probably not a big help here, but a few things...
I would kind of avoid Chain Reaction Cycles as there was a bunch of credit card fraud reported wrt them. They are big, from the UK. An interesting operation (in terms of automation, there is a youtube of it worth checking out). But I avoid them... Instead, I like JensonUSA. Decent prices, good shipping to Canada also including all border fees and taxes. See link. They have many 8 speed (and even 7 speed) cassettes in many gear ratios at many price points, but maybe not specifically what you are looking for...
I have an older hardtail mtb that is still 8 speed. Personally I like the cog spacing better in terms of tuning the shifting... less finicky than 9. But I have a 1x9 setup on another mtb... once I went SRAM, shifting tuning issues mostly went away (1:1 helps). Personally, I would not bother upgrading the cassette size unless the bike frame is really high end and you want to upgrade... lots of parts will have to change, and the improvements are minimal at best (says the mountain biker)...
I personally like a wide range of cogs on the back so I can get away with less front shifting. I am not adverse to changing my cadence a little, and prefer that to having a bad shift up front (hence the 1x9 on my race mtb). Road is cleaner and less problematic in terms of shifting, so your biases may be totally different!
