The fastest I've ever had my '67 is about 80, but honestly the difference between 50mph and 80mph seems academic at best. Can't really tell behind the wheel - although it's readily apparent it has plenty to give still. I'm perpetually astonished at how smooth and quiet that car is for its age and heritage - Cadillac sure knew how to build a car back then. Of course, driving a 5500lb Caddy at those speeds requires a lot more road and a lot more caution than a modern car - the brakes do a good job once (15" drums - HUGE!), but only once.
I used to have a client who liked to tell the story of his first Cadillac - a '68 Fleetwood with the 472 - and his first trip to Vegas in it. Up 15 at 120mph when he dozed off and ran off into the sand. The sudden deceleration startled him and his fearful steering input ended up rolling the car. A little drama, but the car ended up back on its wheels and he finished the drive.
I never really believe him til I replaced the vinyl top on mine. The roof and supporting sheet metal is STOUT on those cars, almost unbelievably so. Hard to say it was great or lazy engineering, the result is pretty darned sturdy. ;)
