The Passat wagons came with sticks, but I think the newest one would be about 5 years old. Bigger inside than the Jetta and I think overall, a better car. V70 wagons can be found with sticks, but I think not in the XC70 variety. Subaru wagons are easily found with stick shifts. Not nearly as nice as a SAAB or Volvo, though.
For crossovers, you can find a Tiguan with a stick but the back is kinda tight and it may be too slow for you. The CX-5 comes with a stick and is a bit sporty. Again, kind of tight inside.
Then there are the hatchbacks (small wagons). Look at a GTI for strong performance, and on your budget.
