As Dave said, I can really identify with your position, I've been through this and expect it to happen again, and again, with my Saab and my Audi project. First, I think your decision probably will be based on why exactly you are "losing the loving feeling". Most likely, if this is financially driven, and you have few options to select before choosing to sell the car/parts, selling the car probably makes the most sense for you.
But if it is just for the loss of inspiration/interest, that happens alot to enthusiasts, especially in the winter! Sometimes we need inspiration, sometimes we need to again revisit all of our options, which often leads us to becoming inspired again (or sometimes we just need the temperature to rise and some sun to shine). Or, simply stand in front of the car an imagine it complete just as you originally envisioned. Blah blah, I'm sure you know this since you are an enthusiast.
All that said, parting out the car could be fruitful or it could be frustrating. Putting it back together keeps a rare 900 on the road, something I know that I personally care about. Its true, the buyer market for high quality c900s is not plentiful, it may take some time to find one. But I think if the car is as nice as you say it is, you'll get alot more satisfaction now, and even after its sold (if you actually sell the car) by finishing what you started and seeing it through. I dont't know you, but the feeling of satisfaction you can get when finishing a project like that can be huge, and lasting, even after the car is gone/sold. Parting it out might seem like a good decision now, but in the end I have a feeling you'll look back and wish you hadnt gone that route. I almost bagged out on my SPG, and came to this conclusion myself as someone who loves to see a beautiful c900 on the road, and also hates to give up on something I started.
Maybe you could investigate some options, or find someone who can help out.
I certainly dont know whats best for you, but check out Todd Campesino's red Talladega. Its hard to walk away from a ted tally after seeing how incredibly beautiful the car is when its in top condition.
On that thought, email me some pics. My airflow will be sone soon, and I'd hate to see a good tally go for parts....
