First, as you know, a clean, tight, well-running SPG is a joy to drive. At the same time, to make a classic 900 be a daily driver you have to "want it". Personally whenever my enthusiasm wanes, I think of the $$ required to drive something else that would be as cool/pleasurable as an old 900 and quickly re-embrace my classics.
You don't want the project to be a "chore". It will kill your motivation and may impact the quality of workmanship which will further reduce your enthusiasm. I would sell the dash and other NOS on ebay where I am sure they would get top dollar. Selling the engine/trans out of the car is a bit trickier because it is hard for a buyer to access their condition if they are not in a car that can be test driven.
All that said, IMO if your heart is not in it, you should keep the car together so it can be purchased, restored and loved buy another Saab nut. These cars are getting rare and I want to see as many as possible stay on the road.
These decisions are HARD! (Which partially explains why I have four classics for two drivers and am searching for a fifth.)
