The industry standard is Means Estimating. They have books out for new construction and books out for renovation work. Everything is broken down into components, so you need to know how basic assemblies come together to properly estimate a wood framed floor (base plate, joists, rim joist, subfloor, bridging, finish floor, etc...).
I think they also have a "square foot" book that lists by prperty type.
I'd check your library for the Means renovation book. It's a comprehensive resource. And expensive to buy.
If I were to build a house, I would go with panelized construction, or pre-manufactured "modular" homes, or *ideally* a timberframe home package. Each system lets you rapidly get under roof so weather is less of a problem. Timberframe (SIPS enclosed) and modular can be extremely energy efficient.
