Our house was made in 2000/2001. We went with granite and a custom cabinetmaker for the cabinets.
The cabinets are much nicer, plywood as you are looking for rather than various sorts of particle/mdf stuff. Check around. We ended up paying a thousand or two less for the custom rather than the hardware store choices, and the quality is top notch. Same guys that do $100k+ kitchens in the fancy "summer cottages", just on a smaller and more economical scale for the same skills.
We saved enough that we had them do cabinets for the bathrooms sinks and tub surround as well.
Granite was about half the price of corian, and it still looks great and cleans nice.
We went with sandy tones for the tile floor. It never looks dirty!
