If you plan to hire someone, make sure you get at least three references and take note of how they did on the schedule. Being without a kitchen makes for difficult living. Also find out if they seal off the rest of the hosue as they work. If they don't you will find living there while they work more difficult and costs (cleanup later) much higher. Condidering learning enough about it so that you can be the GC for the job. Note that note all "cabinet installers" are quallified to move structural or even non-structural walls. You need a generalist but one who's a craftsman too.

Consider the "living there" issue, particularly if you have kids and pets. I did a DIY job, preserving the sink and stove areas until the very last so we could continue to use the kitchen. I would not do it that way again, it made the construction much more difficult and time consuming.
