I think that only really works if you're willing to pay significantly more than the item is worth (ie average price in ended auctions) or if the auction is not very competitive. I don't bid in the heat of the moment - I research the average price first, and if the auction has gone out of whack I don't bid. Obviously about 50% of the time it goes above average... and sometimes waaay over... sometimes way over other "buy it now" auctions! there are some real fools on ebay. But 99% of the time, auctions I've viewed or participated in are won by somebody who comes in last second with a smart hail mary bid (not $5 over the existing bid).
So it depends on whether you just want to win all the time, or want to consistently win + get a reasonable deal all the time. Sometimes the former makes sense (time is money)...
