So many stories, so little time. Three really good ones on air-cooled VW bugs where I got started wrenching.
68 Bug:
Incorrectly adjusted the valves so that the chronically problematic #3 exhaust valve burned out early. It dropped into the engine at 6 AM 40 miles west of Salt Lake City.
70 Bug:
Was replacing the front axle assembly: the whole I-beam. Came off fine and all was going well. Easy job! But you can't put it back on without taking the tie rods off and re-attaching the control arms to the axle, then reconnecting the tie rods, steering knuckle, etc. And that required more tools and skill than I had. So it was towed to the dealer for repair and alignment.
68 Bug:
Removing the generator on a VW bug in a way that disconnected it from the cooling fan, dropping the bolt for the fan someplace down in the bellhousing. Another tow to the dealer, as I needed the car, and my indy was out of town.
But wait, there's more!
84 C900:
Replaced the starter. Car still wouldn't even turn over. Battery was fine. Turned out the ground strap from the starter was so internally corroded it wasn’t doing its job. Probably didn't need the starter. Duh!

Changing the t-stat. Easy, right? The lower bolt turned fine, but wasn't really coming loose. Turned out it had broken off just below the head of the bolt and the threads were wedded to the block. My indy was able to drill it out. Replaced it with a through bolt. (Lesson: Always use some PB Blaster on those exposed end threads when doing the t-stat.)

Put the air filter in backwards, so it blocked air flow to the engine. Couldn't for the life of me figure out why the car wouldn't start!
9-5:
Using a vacuum bleeder to bleed brakes I did what the guy at Advanced (which loaned it to me) said to do. Which turned out to be backwards and was actually putting air INTO the system. That was really fun. Bought a pressure bleeder the next week.
