I trim fat off of steaks to prevent flare up. Also get lower fat hamburger. We can get Black Angus steaks that are very well trimmed as purchased. Might be a benefit of living in Kansas.
I had a gas grill in the 1980's and sold it in a few months. If hot enough to get a good finish on the meat, it would easily turn into a an incinerator.
I have a 22" Weber "dome" charcoal grill with wire racks. A mini oblong charcoal grill with iron grates and a Lodge cast iron hibachi for use with lump charcoal. I never set out to become a charcoal grill nut, it just happened.
To cook chicken and sausage, you need the larger 22" grill with coals on one side. Start over high heat, the move off away from the coals and put the lid on for indirect cooking.
You can cook salmon over the coals. Put some seasoning in mayonnaise and spread on the salmon. Start with high intense heat. The mayo provides some fat for non stick but has low potential for flare ups. Start flesh side down, then finish on the skin side to hold the fish together.
