We have a Weber Genesis gas, porcelain coated cast iron grill (like Vermont Castings) - it's 2 burner, and it never seems to get all that hot... anyway, I agree on keeping the flavourizer bars and drip tray (and bottom of the bbq) clean. we have at times been guilty of letting it go for too long, and I've actually had to use the fire extinguisher once (the whole thing was a raging inferno).
So I think that might be the key to avoiding flare ups in general: cleanliness. That said, it is a whole heck of a lot of work to clean up if one uses the bbq regularly for normal cooking when one is busy, especially where it might seem easiest to just burn things off! The weber has held up pretty well - have had it more than 10 years now.
