You're doing the right thing for salmon. Foil is the way to go.
For steak, pre heat the grille, lid closed, burners on high, for 5-7 minutes or so.
I put some canola oil on the grid (mine is porcelain) with a wadded up paper towel.
Drop heat to medium or a little less on the middle, low or a tad more, on the front and back burners. Cook 5 to 8 mins a side , obviously depending on thickness and how you like your meat cooked.
I rarely have a steak catch fire. It's okay to occasionally let it run hot for 10-15 mins during pre-heat. It burns a lot of the flammable good of the V-shaped bars.
