I prefer a leaner cut of steak which cuts down on flare-ups, and generally grill london-broil cuts marinated in balsamic vinegar for 8-12 hours.
I added a layer of lava rock between the burners and the cooking grate to make for more uniform heat, and I grill at medium heat for a bit longer, flipping & rotating to get the cross-grill marks. I also spray olive oil on the grate before grilling.
After I'm done, I scrub the grate and crank the heat for 5-10 minutes to burn up any grease that made it to the lava rock.
I grill salmon fillets on foil to contain the grease.
FWIW - Charbroil Commercial stainless LP grill, 3 bronze burners, about 9 years old.
