Some of my favorites are Vermont Rt. 100, particularly between Londonderry and Killington, and the section of New Hampshire Rt. 112 known as the Kancamagus Highway. U.S. Route 302 in NH also has some spectacular views of the Presidential Range of the White Mountains. You can drive up Mt. Washington (6,288ft.- highest peak in NH) or take a ride on the cog railway. There's good hiking EVERYWHERE in VT, NH, and ME.
The only amusement park I can think of offhand is La Ronde in Montreal. In New England, most ski resorts have mountain bike rentals (downhill MTBing is more thrilling than a roller coaster, in my book) and some have alpine slides, gravity-powered all-terrain go-karts, and other such thrill rides. Many also keep a chairlift running for sight-seers.
There's plenty of good music in Boston, and lots in Burlington, VT, too. Don't forget to check out some microbreweries along the way...
