Your rental report sounds like many I have written. My ultimate solution to this was to buy a used 9-5.
However, a few pointers...
1) try to work with a single non-airport car rental shop if you can and call them in an effort to secure a specific type of vehicle. I used to call a couple months in advance, and then call to confirm a couple days prior. If you are a repeat customer, the franchise owner will often try to juggle his lineup to get you the car you want.
Alternatively, if you really don't care much, always request the smallest cheapest option and you will most likely get an upgrade as everyone wants those cars!
2) tilt steering, as mentioned can fix that steering wheel blockage, as can seat adjustments... but I get it... these sorts of cars are not designed very well for ergonomics.
3) Isn't the Journey just a glorified minivan? Yes, that would be torture to drive if you were expecting something better.
4) All the taller boxes I've driven handled pretty badly. However, some of the newer ones are apparently pretty good. Maybe the manufacturers are working this out.
I love Justin's comments re the Avenger... wow that was a piece of crap. So the Journey uses that platform. Awesome.
