I think without an extremely precision build you will want to stay with a max of 93mm or less.
Finding pistons should be your first task as they are hard to find economically that will work.
I've been working with Pete Carson here in Oregon on engine builds using 'Pinto' 2 liter spec pistons.
The standard Pinto bore is a good first overbore and there are available pistons in several larger bores. Per Erik the piston pin center to deck dimension is very important. Standard Pinto gives a slightly greater compression ratio than the low stock ratio of the 1700 V4. We have done several engines with Pinto + .020 pistons [ 91.313 bore ] where the block has been 'decked' to raise the compression. I'm planning a higher performance build using Pinto +.060 [ 92.329 bore ] and decking.
Pistons - and correct rings will be the most important start.
You can use different rods/pistons - and crank machining to get near 2 liters.
Do some search and reading about current and recent performance V4 building.
