Sure, you get to pull a lot of stuff out of the way, but it's not a dismantling and is within the reach of a good DIYer with the right tools and skills. Most of us could probably pull the entire dash out of our Saabs, too, but the point is that a lot of car repairs these days are unnecessarily complex.
My #2 indy and I were talking about this one day. He had to do some a/c repair on an Escalade or Tahoe. Didn't seem all that bad, but required removing all the seats and the entire center console. While he can charge for it, he really doesn't like it because it still pisses off his customers and he has to constantly explain why stuff costs so much. He'd rather do several easier jobs than have a car tying up a service bay for a coupla days.
I'm increasingly finding myself looking for cars based on how self-sufficient I can be for repair. I don't need to do everything, but I like being able to do 85-90%.
