Ideally you'd be very close to the OEM overall diameter, but that's only if you care about the accuracy of Speedometer, Odometer and SID info.
Any particular tire should have a recommended rim width, and a range of allowable widths. You need to follow that.
As Slug mentioned, you should also try to maintain the recommended load range.
You'll loose dry pavement performance, but I assume that's acceptable to you.
