Some people consider the 2004-2005 9-5 the pinnacle year of that model 9-5 and the wagons seem to be in some demand now.
The brakes are usually not a hard job, though it's likely you will be dealing with rust issues, so probably not a task for the inexperienced. A tire chain type place should be okay to do it and not charge a ton.
The valve cover job is not a complicated job, maybe a little tricky to keep the new one in place when you flip it - just use a lot of tooth floss to hold it in place as you turn it over, which you then cut once its in place. Youtube has videos.
I would keep it, but that's just me.
If not that, I would definately list it for sale honestly and see what you can get.
