The separate welt piece is trim. Welting is the sewn edging on the canvas edges. If it's gone, you can try to source another, IMO it's for appearance. More important the seal is good.
Forgot to mention the c-pillar fit in conjunction with the 4th bow. Also important. The tautness of the canvas will be mostly determined by the front to back fit, really from 4th bow to the first. But as I stated, don't forget the side to side, due to possible canvas overhang over the windows.
Sounds like you're doing fine, taking your time, checking things out. It's not hard, just tedious.
Oh, when using the adhesive, be QUICK! That stuff dries fast...
