If you're not planning on racing your bike, I'd say you could be safe with sora or 105 components. It really depends on what you feel most comfortable shifting with, as I've heard some people dont like the feel of sora. I don't have experience with Campy, but from what i've heard usually their components are a half step above Shimano: Record > Dura Ace > Chorus > Ultegra ...etc. However, it's more expensive too.
Are you a strong climber? If not (or if you don't know), test ride a double out to some hills and ride around. If you can't get up them, you may be in the market for a triple front cog.
Wheels are important. You want a pair that is going to be stiff and light (just like on a saab :) ). If you're heavy, you may want to avoid wheels with lower spoke counts. My wheels have 16 spokes each and flex somewhat, although they don't touch the brakes.
Get properly fitted on a frame, and test a couple of different ones out. I have a Cannondale R800, full aluminum. It is really firm, but somehow they managed to make it absorb the nastiest bumps. I like it, but it may turn some other people off. You may want to try out steel, carbon, aluminum, and maybe some mixes.
Make sure it has a saddle that you are going to enjoy sitting on. 100 miles will tear your butt to pieces if you're on an uncomfortable one.
Make sure you get a pair of shoes that are comfortable to you.
You can get some really nice bikes for $1500. Happy hunting :)
