Good info. I too was a heavier rider. I used a good steel frame due to the liveliness and also when steel fails, it will often give warning.
After a stint with tubulars and later 25mm clincher tires, I settled on 28mm clincher tires. They were the best of both worlds, fast, but comfortable. The best ones I had were cotton Clements, but I have not seen them for years. With latex tubes, they were close to tubulars.
Consider your riding style. Will you have a load? Will you be doing a lot of out of the saddle climbing? This requires a stiffer rear triangle.
While the newer 28 (and less) hole rims are lighter, they are not the best for heavier riders. THe same applies to radial front spoking. Once the stuff of specialized track and time trial bikes, they are common now and can be harsh. I would stick with 32 or 36 hole rims laced 3-cross (3X).
I have been watching some incredible deals on eBay on framesets and steel framed bikes. A like new Schwinn Paramount frame for $450, and other complete bikes with high end Reynolds, Colombus, or other CroMo tubing for $600. Granted not all the most current 9 or 10 speed cassette hubs, but with a properly spaced frame, you can build a nice road sport bike using all modern component gruppo.
I just love those Rivendell bikes. Artistry in steel... Same for Waterford bikes, the true successor to the Paramount legacy.
