Thanks for all the replies everybody. I put together a list of all the semi-local bike shops (DC area) and will be hitting them in the coming weeks to do a bunch of test rides. I've already tried the Trek 2100 which I liked, but should be able to test out some Giants, Lemond, Specialized, and a handful of other brands.
FWIW I'm 6'3", ~185 lbs. The terrain around here is pretty hilly, so I'm definitely thinking 3 gears up front. The ride we're doing is in the fall, so I'll be riding all summer and plan to continue after the ride is done. And it'd be a pain to swap the wheels on my mountain bike, 'cause I live about 3 minutes from a nice trail area and will continue riding there.
