It is good to use 12 gage not as a fire safety issue, but to keep the resistance down. This is an issue if you care about sound quality in a high end system. If you are installing an average sort of system, you will be able to save money and probably be happy enough with 16 or 18 gage runs as long as they aren't too long (say more than 30' or so per cable). Often putting wiring in walls results in longish runs (hence 200ft for 7 speakers) and the resistance difference between 18 gage + 12 gage can become significant enough to slightly affect the filter behavior of a loudspeaker. But unless your equipment is quite high end, you might not care. Also, if you are new to audio, I would caution you to avoid buying "exotic" cables, just find reasonably priced 12ga.
The comments regarding replacing iron core inductors + electrolytic capacitors might as well be ignored. It is true that air core + film versions are technically superior, but loudspeakers that use inferior crossover components usually also use inferior drivers, and there is no point replacing them. Unless one is experienced at building loudspeakers, the results of swapping crossover components could easily be worse than better, and it will void your warranty. You would be much better off upgrading to higher quality components instead (designed + possibly hand tuned by experts). (in case you're wondering, I do quite a bit of this ;-)
