As I mentioned, I can tell by comparing overall mpg. If I use the econometer, I get 30 mpg with a cargo box. If I don't I get 22 mpg on the same trip. That seems clear enough.
What you are saying is generally not the case. You WILL increase your fuel consumption if you accelerate briskly and then coast. There are some special cases where accelerating from light to light in a high torque/low rpm turbodiesel (with appropriate gearing) you can save fuel by skipping gears. But that is specific to "weird cases." For general driving you will save fuel if you use BMW econometer or a similar gauge.
Talk to truckers. They use these techniques and some modern trucks even have cruise controls that automatically do what I described in my earlier post. Accelerate down hill and coast uphill.
