It's funny - I actually thought about posting the same thread comparing my '99 9-3SE HOT 5sp. with my newly acquired 2007 9-5 Aero this morning while driving to work.
I searched for a 9-5 Aero Sportcombi all over the country (I live in the midwest) last fall and could only find one or two available with a stick at a time, and they were always high. Last November I took the plunge and found a 9-5 Aero Sportcombi auto in West Texas for a steal, and while a great car, I completely agree with your assessment: the auto is great (for an auto), but it's no match for a stick. The paddles are ok, but their relatively slow reaction time (compared to a stick, I guess) and the automatic downshifting feels unnatural.
Now i've got the itch to find a 900SPG too...
