<<Does where a person received their undergraduate education really play that large of a role in the screening process at your firm? Thanks!>>
I see it as one of three possible choices.
1. Top-top places that anyone has heard of them. Not necessarily with the best programs in all subjects, but overall, a 'safe' pick in particular in areas where the interviewer is not so good.
2. The 'very good' schools that most people have heard of. This includes many good state schools and the usual private ones.
3. Everyone else.
Most companies recruit #1 and #2.
As far as 'consulting' goes, it's basically all sitting behind a table or laptop and do PowerPoint & Excel work, talk to people, blah, blah, blah. If you have the talent (or nerves) for it, it's fine; lots of travel, uncertain income, politics, extremely long hours, the works.
In general, it's all been done before, and unless you run into a really unique situation, it's fairly routine (as we say in vi '1,$s/Foo/Bar/g').
Check things like burnout; how long is the average person been doing this? I've been writing software for a living for 20 years and will continue to do so for another 20, at the time where my classmates are all PowerPoint engineers....
