I ended up talking to a home theatre install company and explained my situation. Guess I did something right as they understood exactally what I was doing :)
Seems as though the best option is just to 'finish it up' just like you would a wall. They said a vapour barrier is perfect, followed by regular fiberglass insulation and then finish the box with sheetrock. Make it 'one with the wall' they said, and everything will be fine. They also said that exhaust fans would be great for heat/dust...but won't make a difference for moisture once the box is finished.
Think I'm going to go that route, and see what happens come summertime. The finished area of the basement is already a/c'd and has returns so that will take care of most of the moisture. If need be, I can just cut in a small vent in the unfinished part as the main trunk line from the blower is right near the box...just to add some extra circulation, and I can also cut in another return.
Thanks again for the input folks, nice to have some great minds working to help me along with this.
